Burger Tacos with Homemade Burger Sauce
INGREDIENTS
For the Burger Tacos
- 500g beef mince
- 8 small flour tortillas
- 8 slices American cheese
- Salt & black pepper
- Vegetable oil (for the grill)
Fresh Pico de Gallo
- 4 vine tomatoes
- 1 red onion
- 1 handful fresh coriander
- Juice of 1 lime
- Salt & black pepper
Homemade Burger Sauce
- 4 tbsp mayonaise
- 2 tbsp ketchup
- 1 tbsp American mustard
- 1 tsp gherkin juice
- ½ tsp smoked paprika
- ½ tsp garlic powder

- BBQ target temperature: 220-250C
- Cooking time: 25 – 30 minutes
- Preheat your gas BBQ for direct cooking, aiming for a temperature of 220-250°C.
- Make the pico de gallo by combining the diced tomatoes, red onion, coriander and lime juice in a bowl. Season with salt and pepper, mix well and set aside.
- Prepare the burger sauce by mixing together the mayonnaise, ketchup, mustard, gherkin juice, smoked paprika and garlic powder until smooth.
- Divide the beef mince into 8 equal portions. Press each portion into a thin, even layer directly onto one side of a flour tortilla. Season generously with salt and black pepper.
- Lightly oil the griddle before placing each tortilla beef-side down. Using a burger press or spatula, press firmly to ensure maximum contact with the griddle. Cook for 2-3 minutes until the beef develops a deep golden crust.
- Flip the tacos so the tortilla is now in contact with the griddle. Place a slice of American cheese onto the cooked beef and close the BBQ lid for 1-2 minutes, allowing the cheese to melt while the tortilla becomes lightly toasted and crisp.
- Remove from the griddle and top each taco with a generous amount of homemade burger sauce and pico de gallo.
- Fold, serve and enjoy while they’re hot, with extra burger sauce on the side for dipping.
