Kofta Kebabs
INGREDIENTS
For the Koftas
- 500g beef mince
- 1 white onion, grated
- Handful fresh parsley, chopped
- Handful fresh coriander, chopped
- 1 egg
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 1 tsp turmeric
- 1 tsp dried mint
- 1 tsp ginger paste
- 1 tsp salt & pepper
- Bamboo skewers (soaked in water for 20 minutes)
To serve
- Flatbreads
- Mixed salad
- Mint sauce

- BBQ setup: Direct cooking
- Target temperature: 180-200˚C
- Cooking time: 20 minutes
- Preheat your gas BBQ for direct cooking, aiming for a grill temperature of 180-200°C.
- Prepare the kofta mixture by adding the beef mince, grated white onion, chopped parsley, chopped coriander, dried mint, cumin, smoked paprika, turmeric, ginger paste, salt, pepper, and the egg to a large mixing bowl.
- Mix everything together thoroughly until all of the ingredients are evenly combined and the mixture becomes slightly sticky.
- Mould the mixture on to each soaked bamboo skewer, shaping them into long, even-sized koftas.
- Lightly oil the cooking grills to prevent the koftas from sticking.
- Then place the koftas directly onto the BBQ and cook for 15-20 minutes, turning every 3-4 minutes until evenly browned on all sides and cooked through.
- Remove the koftas from the BBQ and serve in warm flatbreads with fresh salad and a generous drizzle of mint sauce. Fold, serve and enjoy.
